Every cut of meat at Harper's BBQ is smoked fresh daily. Our brisket goes on the smoker at midnight and comes off after 12–14 hours over post oak wood. The result is a deep smoke ring, perfectly rendered fat cap, and bark that holds up to every bite. We don't finish brisket in foil — we let the post oak do the work.
Ribs get 5–6 hours on the smoker. Pulled pork runs 8–10 hours until it pulls clean. Sausage is made with Texas spice blends and smoked to order. Every side — mac and cheese, coleslaw, baked beans, potato salad — is made in-house.
